Hygiene is crucial when working in F&B to prevent contamination, ensure food safety, and maintain customer health. At JOE, we set the highest standards for hygiene, considering it an integral part of delivering a great guest experience and representing our brand to the public.

Operating in an "open kitchen," we must constantly remind ourselves that everything we do is visible. Therefore, we need to ensure a high standard of personal hygiene, appearance, and cleanliness in the bar at all times.

When on shift, the following guidelines should be followed:

  • Clean clothes must be worn at work
  • You must have a pair of shoes designated for the bar only (you may leave these in designated areas)
  • Shoes should be flat-soled with good grip and closed-in
  • Long-sleeved t-shirts and shirts may be worn, but sleeves must be rolled up above the elbow to prevent food contact with clothing
  • No Jewelry allowed

We consistently adhere to our food handling procedures to reduce the risk of cross-contamination. We expect you to maintain high standards of hygiene to ensure the safest production of our products for our guests. Food hygiene is of utmost importance as failure to follow procedures can have serious consequences for our guests and brand reputation.

To maintain a high standard of hygiene, each store has a self-monitoring plan accessible via the Trail app on the store iPad. Trail facilitates monitoring and documenting temperatures, as well as providing a detailed overview of cleaning tasks. It includes the legally required HACCP and self-monitoring plan. By adhering to the tasks and instructions outlined in Trail, we can confidently present our store to the health department during inspections.
