Intro
Adding more Juicers to the Shiftplan does not make us more efficient in making products, especially without the proper tools/systems. It can actually damage the dynamics of the bar when there are too many at work because the Juicers become very quickly less productive and motivated as soon as there is less to do. It is also difficult to bring them back up to full speed once their energy levels have dropped.
Therefore, we have created a system and a focus towards performing to our full potential as a team behind the bar. We want it to be challenging so it forces the individuals to step up their game and work as a team. We can see that when we are slightly under the ideal team grid, we ignite as a group and work to our full potential following the Team Positioning Systems. These systems provide each Juicer with a set of responsibilities that need to be followed precisely. It breaks down the different sequences of advanced movements, to more simple but set movements in the line of a production chain.
For example, instead of putting ingredients into the blender, press apples, blend, pour up & send out. You only press the apples and let the other Juicers do the rest of the work in the product chain, while you begin on the next juice. This will make us more efficient and better at handling big rushes and busy days.
IMPORTANT
These systems are not only for bars that have 6-10 Juicers working at the same time. We can start to use these systems to kill the list as soon as we are more than 1 behind the bar.

Sandwich Systems

BREAD PROVIDER
1st Priority – bread in grill, cut up bread, clean on the go
2nd Priority – make the sandwich, wrap, send out, look at the List
SANDWICH MAKER
1st Priority – Make the sandwich, wrap, send out
2nd Priority – clean on the go, look at the List
The main point here is that the Bread Provider supports every task but specifically focuses on the more time-consuming tasks which interrupt the flow of the station such as “place bread in the grill.”
This will allow the Sandwich Maker to focus solely on making the sandwiches fast and efficiently.

SANDWICH MAKER

SANDWICH WRAPPER

Here Sandwich Maker 1 only focuses on making sandwiches with support from Sandwich Wrapper. Sandwich Wrapper’s main responsibility is to know which sandwiches need to be made, wrap, and send out. The Bread Provider now only focuses on the bread and cleaning on the go.

The main point here is that the Juice Pourer supports every task but specifically focuses on the more time-consuming tasks which interrupt the flow of the station such as: pour up the juice and send it out. The Juice Pourer can also help prepare the blenders with ingredients for the Juice Maker, for example by adding strawberries, mint leaves, passion fruit, or banana into the blender. This will allow the Juice Maker to focus solely on making juices fast and efficiently.

JUICE POURER
1st Priority – pour up, look at List, send out
Juicer in the Middle is added into the production chain, leaving the Juice Maker only to focus on pressing apples and the juice Pourer only to pour up juices and send out, while the Juicer in the Middle focuses on preparing the blender cans with ingredients and making shakes & “Hells”.

Coffee Systems

MILK JUICER
1st Priority – Steam milk, pour up, send out
2nd Priority – assist with grinding coffee, tamp and making shots
Again the main point here is that the Espresso Juicer supports by executing every task that is time-consuming and interrupts the flow of the station such as grinding coffee and making espresso shots”
This will allow the Milk Juicer to focus only on steaming milk and sending out the coffee fast and efficiently. The Milk Juicer can help grind coffee etc. if needed.
3ONCOFFEE

Espresso Juicer continues to make the espresso shots, while Milk Juicer 1 steams milk and sends out the coffee. Milk Juicer 2 is in between by supporting both Milk Juicer 1 by steaming milk and sending it out but can also help Espresso Juicer making espresso shots and etc. if needed.

Choose your bar type
The Shiftplan is the tool we use to tactically plan out how we intend to maximize the best performance from our team. It is the framework for aligning the entire team’s efforts through structured Team Positioning. Each shift has designated tasks & responsibilities assigned to it for the Juicer.
- Creating the most optimal shiftplan every day by considering Juicer experience and key times of day when deciding who works which specific shift.
- Optimising the team on shift by assigning the best-suited Juicers to each station based on their abilities and strengths BTC during a rush period.
A Digital List which connects to the POS System and displays the orders in an organized manner. The List shows all orders that need to be made, while also displaying details about the order such as:
– The order is To-Go
– The Sandwich is without Tomato
– The order is for a Guest named “Christian”
– And much more…
Cleaning-on-the-Go is a workflow we use to ensure our product making stations are maintained well during a rush and throughout the entire day. Our bar is an open kitchen that the guests can see and we make all products on-demand, so we need to make sure that the work stations are always presented well by using Cleaning-on-the-Go. This procedure is performed after making every order and for example while waiting for the bread to be grilled or the juice to blend.
