Dial In: Step by step guide

STEP 1: Grind out one dose of coffee

STEP 2: Gently tap portafilter without spilling coffee to level the grind

STEP 3: Place in Puq Press for tamping of coffee

STEP 4: Remove portafilter tamped and place in group head

STEP 5: Press double shot button and run shot

STEP 6: Check extraction time- If too fast as shown make grind finer

STEP 7: Adjust grind finer in this case by moving adjustment towards left- smaller numbers

STEP 8: When making adjustments be aware of number changes as a reference

STEP 9: Grind out and throw 2 x shots and use third

STEP 10: Gently tap portafilter without spilling coffee to level the grind

STEP 11: Place in Puq Press for tamping of coffee

STEP 12: Press double shot button and run shot

STEP 13: Check extraction time is within recipe- 25-30sec as shown

Short run-time: Less intense and sour

Long run-time: Very intense and bitter

Ideal run-time (25-30 seconds): Balanced flavour between sourness and bitterness

Daily Cleaning

The daily cleaning can be carried out by all staff EOD

STEP 1: Turn hopper slide gate to left so that coffee beans cannot drop

STEP 2: Grind out all coffee from burr chamber until empty

STEP 3: Turn hopper to left and lift to remove

STEP 4: Pour remaining beans into an overnight bag and seal

STEP 5: Purge steam into hopper to disinfect and dampen

STEP 6: Wipe  dry with a clean non-abrasive towel and place back on grinder

STEP 7: Brush excess grind from grinder and scale

STEP 8: Pull down on chute to remove and clean inside with dry cloth

STEP 9: Position grinder chute back in place

REMEMBER:

  • Never place any grinder parts in the dishwasher
  • Never clean with anything abrasive
  • Do not wet the grinder
  • Always handle the grinder with care so not to damage parts

Deep Cleaning Video

The deep cleaning should be carried out by Lead Baristas, Baristas, Regional Managers, Bar Managers, Shift Managers

STEP 1: Turn hopper slide gate to left so that coffee beans cannot drop

STEP 2: Grind out all coffee from burr chamber and throw away until empty

STEP 3: Turn hopper to left and lift to remove

STEP 4: Pour remaining beans into an overnight bag and seal

STEP 5: Purge steam into hopper to disinfect-wipe  dry with a clean non-abrasive towel

STEP 6: Loosen two locking screws by turning to left - DO NOTREMOVE SCREWS

STEP 7: Turn inner collar to left to unlock. Circle should align with unlock image

STEP 8: Remove cover

STEP 9: Brush clean excess coffee, grind from top

STEP 10: Turn cover over and brush off coffee near black ring

STEP 11: Take clump crusher and push up and down to remove excess coffee

STEP 12: Remove clump crusher and wipe clean with dry cloth

STEP 13: Clump crusher should look like this and place to side - DO NOT LOSE

STEP 14: Loosen 3 x locking screws on burr cover by turning left - DO NOT REMOVE SCREWS

STEP 15: Turn burr cover to the right into unlock position

STEP 16: Remove burr cover

STEP 17: Clean burrs with paint brush

STEP 18: Brush away any loose grind moving burrs in a clockwise direction until clean

STEP 19: Use pipe cleaner to loosen excess grindfrom around burrs

STEP 20: Cuse pipe cleaner to clear clump crusher chute - move up and down

STEP 21: Clean grinder chute with pipe cleaner

STEP 22: Burrs should look like this

STEP 23: Place top burr cover back on

STEP 24: Turn burr cover to left into locking position

STEP 25: Tighten 3 x locking screws - Turn right

STEP 26: Place clean clump crusher back in place

STEP 27: Place cover back on into position

STEP 28: Turn collar to right and lock into place

STEP 29: Tighten 2 x locking screws – turn right

STEP 30: Add clean hopper back to grinder

STEP 31: Gently pull down on grind chute

STEP 32: Clean any coffee residue from inside of chute with a dry cloth

STEP 33: Gently push chute back into place until it locks in

REMEMBER:
