HOW TO STORE ROASTED COFFEE BEANS PROPERLY:

  • Coffee beans should be stored in a dry cool space away from direct sunlight or hot areas
  • Stock rotation is crucial to get the best out of coffee
  • Create a “coffee in” area for deliveries that come in then move the older coffee to the “coffee out” area to go into use first

WHAT IS THE PEAK TIME FOR USING ROASTED COFFEE:

  • It’s fair to say coffee will taste delicious anywhere between 7 days from roast to 8 weeks as a standard
  • For the first 7 days roasted coffee will naturally release gasses from the roasting process and can be unstable to use
  • From 8 weeks onwards roasted coffee will become flat in flavour with little crema present
  • Darker roasted oily coffee beans can become rancid more quickly

ORDERINGAND STOCK ROTATION:

  • We need to look at the way we are ordering roasted coffee and keep this to a minimum and order more frequently
  • Correct stock rotation in store needs tobe enforced with Bar Managers and Lead Barista’s
  • Coffee should not be stored in hot areas such as above sandwich toasters
